I do know, and have also written in the "Preserving Meat, Dairy, and Eggs" book that some people, including the USDA) don't recommend some of these things or consider them to be safe. This is the same USDA that also allows a lot of herbicides and pesticides in our food, etc., when money speaks. So I'm not altogether convinced they always have our best interests at heart.<br /><br />And just because a lot of people, myself included, have safely canned and done these other preserving methods with butter, cheese, and other dairy products (as well as meat) for many years, doesn't guarantee that something can't go wrong. <br /><br />There have been hundreds of people here and on forums (such as Backwoods Home, Prepared Society, etc.), as well as people I know in 'real life', who have said they have been canning dairy products for years. There have been no reports of anyone getting sick, poisoned, or killed from their home processed/preserved/canned dairy products (or meat products, for that matter).<br /><br />How many commercially processed foods of ALL types have sickened or killed people, just in the last few years? Hmmm......<br /><br />Please be educated about your choices, and follow procedures carefully and be very picky about cleanliness and safety. I stand by claim that these things (dairy, meat) CAN be safely canned and otherwise processed at home.<br /><br />Thank you for expressing your concerns. I welcome all opinions or thoughts on any of these matters.
